Whether you're starting a dedicated pizzeria or looking to add a highly profitable menu item to your existing restaurant, pizza is an all-time favorite that customers always appreciate.  Adding a pizza oven to your restaurant can be a winning investment that quickly pays for itself. However, there are several different types of commercial pizza ovens available. Which you choose will depend on your needs and how many pizzas you expect to be serving.

The 4 Most Common Types of Pizza Ovens

1. Convection Ovens

Are you looking for a cost-effective way to add pizzas to your menu, but not expecting to make too many at once? Convection pizza ovens are a great choice.  They are your least expensive option in pizza ovens, take up less space and are easy to clean.

That said, they’re extremely low volume: you won't be able to cook more than a few pizzas at a time, in most situations.  A dedicated Italian restaurant or pizza shop will probably want to look at larger options.

2. Pizza Deck Ovens

Pizza deck ovens are like traditional ovens but built specifically for pizzas.  They typically have 4-6 decks within, allowing for several pizzas to be cooked at once.  These also require more manual oversight, as the pizzas within will need to be moved around to ensure even heating.  

These ovens are very space-efficient and can often be added easily to existing commercial kitchen facilities. This is a good choice when you don't intend pizzas to be the sole focus of your menu.

3. Wood-Fired Pizza Ovens

Wood-fired pizza ovens are almost universally considered to produce the best pizza and are loved by most diners.  Merely advertising "wood-fired pizza" is enough to bring in more traffic!

However, a wood-fired pizza oven, even if it isn’t brick, tends to take over a restaurant.  It will most likely need to be custom-built for your location, and you will probably want to have it in a central location where patrons can watch it in action.  Also, this is not a high-volume method of pizza production - there will be an upper limit to how many pizzas can be in the oven at once, so you'll need to think carefully about your demand vs. floor space when deciding how big the oven should be.

4. Conveyor Pizza Ovens

Conveyor belt ovens are the option if you're opening a dedicated pizzeria and expect high volumes of traffic.  These are very large systems, which will take up most of your kitchen, but allow a huge number of pizzas to be cooked at once by sending them winding around a series of conveyor belts housed within ovens.  These are what you generally see in "fast food" pizza restaurants as well.

However, they are expensive and can be extremely complicated pieces of machinery, so you can anticipate added maintenance costs.
