The ketogenic diet - keto for short - seems to be here to stay.  Unlike many fad diets, keto has been around for years and continues to gain adherents.  However, keto-friendly restaurants are still relatively rare, particularly those who devote large portions of their menu to keto meals.

So, if you're looking to expand your customer base, developing and offering keto recipes is an excellent option!

What Is the Ketogenic Diet?

Simply put, the keto diet is extremely low on carbs and other sugars - generally only 5-10% of a person's calories per day - while being high on meats and fats.  This might seem counter-intuitive, but the point of the diet is specifically to deny the body carbs and sugars, which are normally a primary source for calories.  This causes the body to enter a state called ketosis (hence the name) where it burns fat to gain more calories.

In essence, the ketogenic diet tricks the body into burning fat, even as the dieter gets to enjoy rich fatty meals.  No wonder it's popular!

Making Keto Substitutions

Creativity and flexibility are the names of the game if you want to offer keto meals.  Most dishes can be recreated, but you'll need some less-than-usual ingredients.  For example, standard pizza is out since the crust is full of carbs... but a crust made of cauliflower can be a good substitution.

Note: Many believe the keto diet cuts fruits and veggies completely, but that's not entirely true.  They just need to be low-starch and low-sugar.

However, another benefit here is that most keto recipes are very appealing, and don't taste like typical "diet food."  So, you can offer keto meals at your restaurant without too much risk of alienating regulars.  Your servers can just encourage them to try new things!

Keto dishes tend to either being baked or simmered.  So, you want to make sure you've got plenty of appropriate gear.  Keto pizzas are quite popular, so having a pizza oven would be a very good idea.  Or, if you want something a bit more portable and versatile, and can do pizzas along with other dishes, consider a convection oven instead.

Also, you'll want plenty of casserole dishes for baking, and possibly even presentation!
