For a long time, running a pizza restaurant involved a lot of trade-offs - time vs effort vs taste.  It's almost universally agreed that direct-fired ovens, such as wood-fired, produce the tastiest pizza, but they're also large and require a lot of effort to operate.  Other options, such as conveyor-belt ovens, allow for faster and easier pizza-making, but just aren't as nice.  That's what fast-food pizza joints use.
