The Winholt NHPL-1825-UNC-DGT 28 Pan Non-Insulated Heater Proofer is built with heavy-duty aluminum construction, designed for durability and reliability. Its forced air design ensures even heat distribution, while the removable chrome pan slides offer variable spacing and easy cleaning, adjustable in 2-inch increments. The unit comes equipped with 25 pan slide sets, and its 5” polyurethane plate casters provide effortless maneuverability, with brakes on the front casters for added stability.

This heater proofer offers a "Proof/Humidity" mode with up to 95% RH at 110°F (43°C) and a "Heat" mode that reaches up to 180°F (82°C). The full-length clear door opens 90 degrees and is field-reversible for left or right-hand use, secured with a magnetic door latch and an easy pull handle for convenience. The internal wire slides, adjustable in 2-inch increments, accommodate standard steam pans.

For added ease of use, the control drawer is removable, allowing for quick and simple cleaning and maintenance. The drip trough and internal water pan efficiently manage condensation, particularly in proofer mode. With a capacity for 28 pans (18” x 26”), the unit also features protective corner bumpers to safeguard the cabinet, staff, and nearby fixtures.

The new digital drawer offers improved functionality, including a circuit breaker for overcurrent protection, LED lights indicating when heating and proofing temperatures are reached, a precise digital thermometer for accurate calibration, and a separate readout for humidity and temperature settings. Additional indicators alert users to low water levels and low temperatures.
