The Turbofan E31D4/SK2731U/VH-31 is an all-in-one convection baking solution combining high-performance digital control, self-venting hood system, and a professional-grade mobile stand. Designed for non-traditional kitchens, kiosks, cafés, or areas without ducted exhaust access, this system provides safe, compliant cooking without sacrificing speed or control.
The oven is powered by a 2.8kW bake element and a 2.0kW broiler, perfect for baked goods, proteins, and finishing applications. Using a digital control system with dual LED displays, staff can toggle between manual or programmed modes, customize up to 30 recipes, and sequence multi-stage cook cycles with ease.
The OVH-31D (VH31) ventless hood eliminates the need for ducted installation. Equipped with 3-stage filtration (charcoal odor filter included), it condenses steam and grease emissions into a self-contained tray—no water or drain connection required. A built-in fan control system adjusts speed based on oven activity, reducing noise and energy use. The oven and hood are connected with a certified interlock kit ensuring safe, synchronized performance.
The included SK2731U stand supports the full unit with stainless tube framing, six tray runners, and four 3″ castors (two locking) for full mobility and storage.
