The MIYABI 5000MCD 67 Santoku is a premium Japanese knife handcrafted in Seki, Japan, designed for precision and durability in the modern kitchen. “Santoku” translates to “Three Virtues,” referring to its versatility in slicing meat, fish, and vegetables. With a flat edge profile, this knife is ideal for straight-down chopping rather than the rocking motion of Western chef's knives.
At its core, the blade features ultra-hard MC66 micro-carbide powder steel, CRYODUR® ice-hardened to an exceptional 66 HRC for superior edge retention and cutting performance. Surrounding the core are 132 layers of steel, forming a breathtaking 133-layer Damascus pattern that is as functional as it is beautiful.
Each blade is hand-finished using the traditional Honbazuke method—sharpened in three meticulous steps to achieve a symmetrical edge with an angle of 9.5 to 12 degrees per side. This double-bevel construction ensures the knife is suitable for both right- and left-handed users.
The elegant handle is crafted from black ash wood and shaped in a traditional Japanese D-profile. Enhanced with a decorative mosaic pin and steel end-cap, the handle offers balance, comfort, and fatigue-free control during extended use. With no finger guard, the entire length of the cutting edge is usable for precision cuts.
