Natural Vs. Processed Sugars and It's Function In a Commercial Kitchen
Most people know the food groups that contain natural occurring sugars, such as those found in milk (lactose), fruit (fructose) and potatoes (glucose). However, processed sugar can sometimes be trickier to understand because it has subtly been incorporated into all major food and beverage groups found at the retail level. Take for example, high fructose corn syrup which is found in sodas, cereals, breads and candy bars—a processed sugar created by breaking down corn starch into part glucose and fructose.
From a health stand point, it is advantageous to consume natural sugars, as they tend to be in foods that contain essential vitamins, antioxidants, and fiber such as those found in fruit. In the spectrum of processed sugar, consuming cane or beet sugar is a preferred choice over high fructose corn syrup. Manufacturers, however, are faced with cheaper labor and production costs associated with using high fructose corn syrup, so it is highly unlikely we will see any type of major overhaul in the retail isle any time soon. This gives restaurants, bakeries, and cafes a chance to fill this void by using more natural ingredients—having the right commercial kitchen equipment will be essential to accomplishing this goal.
